Glycosaminoglycans

Glycosaminoglycans (GAGs) are long, linear, highly polar polysaccharides that give bone cartilage its sponge-like structure. This structure protects the bones and reduces friction between them. Mussels naturally contain high levels of GAGs, including chondroitin sulfates in proportions similar to those found in human cartilage.
