Glycosaminoglycans

Glycosaminoglycans (GAGs) are long, highly polar, linear polysaccharides that provide the sponge structure of bone cartilage. This structure protects and limits friction between bones. Mussels naturally contain a lot of GAGs, chondroitin sulfates, which are close in proportion to human cartilage.
